Cynara cardunculus (Cardoon) Cynara cardunculus (Cardoon) is a spectacular plant closely related to the globe artichoke. The masses of silvery leaves are topped by artichoke like buds, which open in June to September to large purple thistle-like flowers, which attract bees. The dead flower heads also make a show in winter.
